The kitchen partners directly with Shimanto-area producers and local fishermen, specializing in Shimanto beer-fed beef, free-range Shimanto chicken, Shimanto pork, and Shimanto-raised eel, alongside raw bonito brought in the same day and served Tosa-style with garlic or seared as tataki.
