A prestigious Edo-mae tempura counter on the 3rd floor of Tokyo Midtown Garden Terrace, run by the legendary Hilltop Hotel (Yamanoue Hotel) that has counted Japan's top literary figures among its longtime regulars. The head chef personally visits suppliers to source the finest seasonal seafood and vegetables, frying each piece to order in aromatic sesame oil — the paper-thin batter preserves natural flavour in ways few kitchens can match.
