The restaurant sources its fish daily from Toyosu Market and follows traditional Edo-style techniques — carefully aged vinegared rice, precise knife work, and artisan presentation on specially commissioned ceramics. The Gran Roof B1F location seats 38 at a counter and tables, making it intimate and well-suited for both solo diners and small groups stopping between trains.
