Tokyo's first dedicated Georgian bistro and wine bar, AJIKA opened in September 2025 in the Kagurazaka Center Building Annex. The stylish 45-seat space — with long communal tables, counter seats, and an open terrace — is co-owned by Georgian entrepreneurs and architects who bring authentic Georgian culture direct to the table. The kitchen serves classic Georgian dishes prepared by a Georgian chef, with a wine list drawn exclusively from Georgia: amber wines, Pet Nats, Chacha, and rare single-estate bottles shipped direct. Lunch features set menus centered on Khachapuri; dinner adds the sought-after Khinkali dumplings (limited quantity).
