Run single-handedly by a former Hasu cook (Onodera-san), it serves at a simple wooden counter in a no-frills neighborhood ramen setting, with orders placed at a cash-only ticket machine. The signature bowl is a handmade chuka soba built on a refined salmon-flake and kombu broth, offered in shio (salt) or white-soy versions, paired with springy hand-cut noodles and tender chashu.
