The interior blends traditional Edo-era craftsmanship — hand-troweled plaster walls and grained wood — with a relaxed, modern Japanese aesthetic reflecting the neighborhood's mix of old merchant heritage and contemporary business energy. The kitchen builds nearly every dish around bonito dashi, from clear dashi soups and dashi-simmered rice bowls to a fluffy dashi-scented souffle omelet and a seasonal dashi hot pot.
