Gyoza Mania's Toranomon Hills branch recreates the buzz of a Chinese night market, with colorful street-stall signage and lively energy filling the dining room. The concept grew from the owner's own trip to China, where local street vendors taught the dough and filling techniques used to reproduce home-style boiled dumplings (shui jiao) prized for their chewy texture. Alongside handmade grilled and boiled gyoza in flavors from shrimp to truffle, the menu features mouth-numbing "yodare" chicken, street-style braised pork rice, and a Peking duck course shared with the neighboring Peking Duck Mania. Every table is charged a small otsumami cover of pickled vegetables and all-you-can-eat sunflower seeds.
