Toriman is a long-running neighborhood yakitori stall on Kiyosumi-Shirakawa's Shiryokan-dori shopping street, grilling skewers over charcoal since the family opened it decades ago. The house tare glaze is made from soy sauce, mirin, sake, sugar, and apple, giving the chicken a subtle sweet-sour edge. A dozen or so cuts are on offer, from negima and thigh to liver, tsukune, skin, wings, heart, gizzard, and cartilage, alongside occasional extras like duck, broiled eel, and simmered home-style dishes. Customers linger on sidewalk benches out front, and the shop's resident cat is as much of a draw as the smoky aroma of the grill.
